Egg prices are forecasted to go up even more.

Eggs being a symbol of wealth wouldn't have been on my Bingo card for 2025 but alas, here we are. It's making things at restaurants and bakeries cost more too, with some either adding fees to a tab or charging more for menu items.

I hate to be the bearer of bad news, but the latest forecast from the USDA shows that egg prices are expected to increase 41%. That's over double what their forecast was a month ago.

So safe to say, we're painting potatoes at Easter.

In recipes, eggs are a binding ingredient to help thicken and add moisture to cookies/cakes/whatever. So if you're skipping them, you still need something that can also make the mix cohesive and moist.

Personally, I love baked goods (cookies especially) so how can we make them without eggs? Bakers much smarter than I have come up with a list of nearly 20 things we can use as egg substitutes in things.

Mind you, some of these sound weird because they are. You wouldn't necessarily have this stuff on your weekly grocery list but if you (like I do from time to time) decide you need to make cookies, these are things that can fill in for the ever-so-pricey egg.
