When you think of signature Illinois foods, you think of deep dish pizza right? Would you be surprised to find out another world famous food is Illinois's most innovative?

According to Thrillist, the brownie; not deep dish pizza, is Illinois’ most important food innovation. Blasphemy. Apparently the brownie originated in Chicago at the historic Palmer House Hotel. Back in 1893, Mrs. Bertha Palmer , asked the chef to make a “ladies dessert” that would be “easier to eat than a piece of pie, and a smaller serving than a slice of layer cake, which could be used in box lunches at the Women’s Building at the Fair;” and just like that, the brownie was born.

If you swear that deep dish pizza is the state’s most important food creation, I won't argue with you too much, but  it wasn’t invented until 1943.
