Last night I was in the mood for something other than chicken (it's the easiest thing for me to cook), so I headed to the grocery store and bought myself a beef roast.

I got home, put my crock pot to good use, made a side salad and, voila! Four hours later, dinner was served.

One of my neighbors decided to come join and brought dessert (a sinfully sweet banana cream pie) and corn fritters.

I've never heard nor tried corn fritters before in my life so I was a little hesitant. She insisted I give them a try and pulled out a small bowl that she filled with maple syrup, passed me a fritter, and the rest was history. Boom. In love.

I wanted to share with you this magical corn fritter recipe so, you too, could share my magical moment. Bon appetite!

INGREDIENTS:

3 cups oil for frying
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white sugar
1 egg, lightly beaten
1/2 cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn,
drained
DIRECTIONS:
1.Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
2.In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
3.Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

Cook Time: 20 Minutes
Ready In: 30 Minutes
